We have had a SUPER bumper crop of tomatoes this year and have Passata overflowing in the freezer (yeay !!!!) but more on that another day…

As we transition through Autumn and say a last hoorah to the milder weather, here’s a little celebration of how wonderful the humble ‘maty can be in little nibbles. These really do feed the soul in their simplicity and deliciousness hmmmm…

Lifting a lovely local smoked barramundi dip:

This includes just chargrilled sour dough baguette, topped with, in this case a smoked barramundi dip, but whatever is your fave (smoked salmon, hummus etc), with home grown tomatoes, finished with fresh home-grown tomatoes, salt and pepper and some locally acquired edible flowers.

 

A beautiful take on a classic – Caprese Salad as an entree

This has to be one of my favourites with juicy ripe tomatoes fresh basil and really good olive oil and balsamic vinegar – the ingredients are the kickers here

This version was for a little entree and consisted of a variety of our tomatoes, a really good quality buffalo mozzarella and some locally sourced edible flowers, finished with fresh basil, chopped up, some salt and pepper and a drizzle of good quality olive oil and balsamic – voila – nothing more than that… (except maybe a lovely Pinot Grigio to wash it down with 😁)

 

 

And lastly another variation of Caprese set up as a little nibble with pre-dinner drinks

Again, same approach as above, this time I used baby bocconcini with ripe Roma tomatoes, finished off with really good olive oil, balsamic vinegar, basil and salt and pepper. Accompanied by some grilled sour dough baguette, so you could make your own bruschetta style snack.

This was served with a OLIVE LEAF GIN (fourpillarsgin.com) and tonic, accompanied by a sprig of thyme and slice of lemon hmmmmm 😋
