3-May-20: After last night’s effort, it was a decent walk along the beach this morning and then a bit of brunch. Nothing too fancy here but sometimes you just luck it in and cook the perfect poached egg – just set but still runny yolk hmmmmm Happy Soul Food moment indeed… so thought I would share
This delicious little egg was sitting on a bunch of wilted spinach, a little bit of goats cheese, streaky bacon rasher, smashed avo, on toasted sour dough.
I use an egg poacher – a wonderful device that helps keep your eggs a lovely shape and saves faffing about with vinegar in the water etc etc. I find the best way to try and fluke that perfect goog, is to just watch closely and give it a “jiggle” to see how “set” it is ! A bit like what they do on Masterchef with panna cottas 🤣🤣🤣
