Ok, Ok I know I said Siesta Time but you’ve got to try this for Easter…

Chief Taste Tester is currently doing the CSIRO Wellbeing Diet and it has some fantastic recipes in it – this is an adaption of one of the breakkie recipes that I made this morning and just HAAAAD to share because it was seriously YUMMO ! And something to enjoy leading up to and through Easter without a lot of effort and fuss…

Get a good quality Hot Cross Bun – we have a new sour dough Bakery near us and it has amazing bread and pastries – people queue up – the Pain Au Chocolates are to DIIIIE for but I digress…

Toast it lightly and then instead of lashings of butter, get some low fat Ricotta – about 30 grams (which is about 2 decent slurps on a knife – one for each side), slice up a small banana and place on top, sprinkle with cinnamon and a slurp on each of “proper” (non of that fake, flavoured stuff), Maple Syrup – about a teaspoon on each – or more if you want to be indulgent – we’re just trying to be a little bit good !

Eat whilst warm and wash down with your favourite tea or coffee – this is TRULY a Happy Soul Food breakfast moment !

Ok, back to siesta time – I think there could be the odd break out moment whilst we plan the re-launch of Happy Soul Food 🤣
