The weather is magnificently mild, with another beautiful Autumn sunny day and it brought forth thoughts of something light and delicious but easy to do, given it is just a weeknight…
Had some smoked chicken in the fridge and so here’s my quick and easy Smoked Chicken and Avocado Salad for 2 people
- Green leaves, washed and torn up – tonight I used baby cos lettuce
- 1 Avocado, cubed
- Either 2 smoked chicken thigh or breast fillets, chopped into cubes
- 1/2 Lebanese cucumber, seeded and sliced small (I don’t like big chunks of cucumber personally)
- The thing that makes it really yummy – mustard, lemon mayo – made to your own personal taste:
- Kwpie Mayo – 3-4 tbs
- About 1/2 dessertspoon of French Dijon Mustard
- Sall pinch of salt and grind of black pepper
- Good squeeze of lemon juice from half a lemon
- Mix all together and then keep adjusting with mustard/lemon juice/salt and pepper until you like the taste
- Place leaves, cucumber and avocado into serving plates, add the chicken, spread the mayo over the top and finish off with chopped chives and if you like, more freshly ground black pepper…
