Well I know one of the last posts before going into Siesta Time was Paella so it is only fitting to relaunch Happy Soul Food with another variation – this time with Seafood – it’s not totally pescatarian as there is some chorizo in it but I’ve now done this version twice and it has worked out well both times.
It’s got an Aussie twist, as the main seafood component is Barramundi !!!! You need to get a large fresh fillet/s, take the skin off it and cut up into chunks of about 5-6 cms
So here it is…
Ingredients
2 shallots (combo of 4 small ones)
2 garlic cloves
1 chorizo chopped into small quarters
1 cup paella rice
8 green prawns peeled
1 400-500g piece Barra- skin off, chopped into chunks about 2-3cm pieces
3/4 cup med fry sherry
500ml of chicken stock
1/2-1cup boiled water
2tbs paella spices
3stalks of thyme, stalks removed
Lemon zest of 1 lemon
Cooking instructions
Slow cook onion, garlic, chorizo in olive oil
Add rice and ensure coated
Add spices and cook up 1-2”
Add sherry and cook out
Add stock and simmer 15”
Add lemon zest
Then add fish pieces and set timer for 15” if too fry add some water – needs to be by touch – not too much
Watch fish – turn regularly but don’t stir rice
As fish pieces cook remove and set aside
Then add prawns and cook and turn – again don’t disturb the rice,
Finish off with a squeeze of lemon and some chopped fresh oregano over top (or parsley but I don’t like it)

Then eat using the wooden paella spoons saved from a trip to Spain 😉
