Garlic infused EVOO & Garlic Bread

A friend of mine had a lot of excess home-grown garlic and turned it into crushed garlic that they frozein ice cube trays. We used it once on home made pizzas, mixed with a bit of oil – I think the texture was really mushy I think from the freezing process and was excellent.

It was sooooo yummy, I thought how about I try and recreate it with just a crushed/chopped garlic clove ?

So, have done this now a couple of times whereby you very finely chop a large garlic clove and soak it in a good cup’s worth of EVOO for a few hours or overnight. Worked a treat on garlic pizzas and I’ve also tried it now for garlic bread. You can top it up with extra EVOO if you need to top it up and just let it infuse for a bit… You can also use the left overs when cooking up something that needs a bit of garlic and oil in it…

Garlic Pizzas

With a plain fresh pizza base, just brush the garlic olive oil over the top generously, spread some sprigs of rosemary and a good pinch of sea salt.

Cook in a hot oven (or pizza oven if you have one) until base cooked. Can serve by itself or use with some of your favourite dips.

Garlic Bread

For the garlic bread, grab some fresh sour dough bread slices, brush the garlic oil over them – both sides – and then pan fry them in a hot pan, both sides, until a little golden – not too long though as you burn the garlic.

Pop them on a tray and top with your favourite melty cheese – I used a pizza mix you get at the supermarket of Mozzarella, Tasty and Parmesan.

Grill until the is cheese melted and hmmmmm very comfy, happy soul food 🥰
