Frittata revisited “right” to fuel a walk on the beach

21-April-20: Today I revisited my “Quick and easy Frittata on the fly” for lunch but had been to the supermarket and so this time had the ricotta.

Basically I made it the same way as the first one back on the 31st March but added about 400g of ricotta. I left out the cream this time around but included the parmesan.

The main ingredients in this version included ham, zucchini, mushrooms with tomato and basil on top.

The verdict ?

It certainly made a difference for the better with the ricotta included – so would highly recommend it but the other version did work and was definitely quite yummy…

 

With lunch under the belt, the afternoon glorious with autumn sunshine and the tides low, the girls and I headed for a late afternoon stroll on the beach. For the love of dogs ! The seagulls were flying low over the waves and whilst the girls don’t often chase the seagulls, for some reason this evening, they caught their eye. It was a delight to watch – my soul content – Happy Soul Food moment…
